Tray bakes are so popular in Northern Ireland, either in coffee shops or at home. Tray bake recipes varies from a simple no-bake, melt and mix choco type (such as rocky road or fifteens) to biscuits base one (like caramel short bread) to little cake squares. Anything made in a tray (except fifteens, which is concerned as tray-bake, but just rolled like a log and cut) and cut is tray-bake.
This is no-bake, simple tray bake, but very popular among my family and friends. It’s Mars bar rice crispy with fair-trade milk chocolate on top. There is so many rice crispy recipe on line, but I think Mars bar one is nicer than just chocolate. And it is important not to use cooking chocolate to cover the top. Use good quality milk chocolate, over 30% cocoa one. Then the rice crispy bars become good not only for kids but also for grown-ups. (I think.)
A good thing about tray bake is that it can feed so many people with little effort and time. I made so many tray bakes since I moved here. Sometime, I will make up a few of different types for a coffee morning or for school events.
This was selection of THANK YOU, TEACHER! tray-bakes for my 5 year old son’s teachers I made in the end of June 2013. He goes to a special need school and has lots of people around him who I want to thank at the end of year. So, instead of giving each teacher a box of chocolate or flower, I made up big batch of tray-bakes or little cakes for their stuff room.
The selection this year was, tray-bakes (rice crispy, rocky road, lemon drizzle cake), mini berry tart and mini éclair.
